Fried rice is a great snack or can be served as a side with dinner.


Ingredients (serves 4)

  • 1 cup ham, diced
  • 1/2 cup shallots
  • 3 cups Boiled rice
  • 3 Tbsp Soy sauce
  • 1 1/2 Tbsp Peanut oil
  • 1/4 onion diced

Method

  1. Heat oil in a pan.
  2. Add the onion and stir until they soft, then stir in shallots.
  3. Add the boiled rice with the soy sauce and stir for 1 minute.
  4. The add the rest of the ingredients to the rice mixture and stir for about 3 minutes or until ready to serve.
  5. Best served with dim sim, spring rolls or a favourite Chinese dish.

  • Home made fried rice is a favourite in our house but I’ve learnt the hard way….to only use cold rice otherwise it goes to glug. Bring on the super sweet corn or baby corn too :)
