This is a quick versatile quiche recipe. I sometimes add some pre cooked pumpkin and fetta cheese. It really boosts the flavour.


Ingredients (serves 6)

  • 1 onion, finely chopped
  • 100g bacon, diced
  • 120g spinach
  • 4 eggs
  • 185ml creamy evaporated milk
  • 125ml milk
  • 30g cheddar cheese
  • 1 sheet puff pastry

Method

  1. Preheat oven to 180 degrees. Blind back the pastry in a quiche dish for 10 minutes.
  2. Heat oil in a frying pan over medium heat. Add onion and bacon. Cook 8-10 minutes or until soft. Drain on a paper towel. Microwave spinach on high for 1 minute or until wilts. Cool for 5 minutes. Squeeze out moisture. Chop.
  3. Remove the pastry from the oven and remove the rice and baking paper. Spread over spinach, bacon and onion. Whisk eggs, cream and milk together. Pour over the filling. Sprinkle over the cheddar cheese. Bake 30 minutes and serve with salad.

  • It is also delicious with diced or tomato in it. It balances the powerful flavour of the spinach.

    • Spinach pie sure is tasty without bacon, I make it all the time with some cheese instead. I don’t add milk and creamy evaporated milk, just use some thickened cream instead. I use more spinach in my spinach pie and love to add some pesto.
