Cake in under 5 minutes?! Um, yes please!!

Ingredients (serves 1)

  • 3 TBS SR flour
  • 2 TBS Sugar
  • 3 TBS Milk
  • 1 tsp Vanilla essence
  • 1 TBS Oil
  • 3 large Strawberries chopped/ mashed into fine pieces
  • Cream to serve

Method

  1. Mix all ingredients apart from the strawberries and cream together in a large mug
  2. Once all combined, add in the strawberries and mix to combine.
  3. Put into microwave for between 1.30 and 2 minutes or until the cake is cooked through and skewer comes out clean. Be careful not to overflow it. If this starts to happen, stop and continue cooking in 10 second intervals until done.

  • I have tried these before but they always look underdone when times up. I think it’s a lot easier to bake a full cake and slice it. It lasts a few days anyway if you are lucky but mine rarely last two days in our house as they are eaten up quickly.

    • If you find that it looks undercooked, just pop it back in for a few short bursts until it’s cooked. all microwaves differ so this could be why. I like baking full size cakes too, but with just hubby and I they usually go to waste as we cant eat that much in a couple days! These are also perfect when you feel like cake at 7:30pm and cant be stuffed dirtying dishes and pre heating the oven and waiting 40 minutes – its almost instant haha And you cant be tempted with eating too big of a portion as they are perfect size, but each to their own :)
