Easy dinner for the whole family


Ingredients (serves 6)

  • 6 Thick sausages of your choice
  • 2 Sweet potato
  • 100g Chopped spinach leaves
  • 150g Diced bacon
  • 1 Brown onion
  • Sprinkle Cheese to top

Method

  1. Cook off the onions and bacon in a pan
  2. Cut sweet potato into cubes and microwave until tender. Mash
  3. Add the onion and bacon to the mashed sweet potato. Add chopped spinach, salt and pepper to taste and mix together
  4. Cook sausages (I bring to boil in large pot of water) and split down the middle. Stuff with sweet potato mixture and top with desired amount of cheese
  5. Place in a 180 degree oven until cheese is melted. Enjoy!

  • Not so sure about the bacon, I think bacon and sausages are too much processed for me. But yes to everything else

  • Must visit a butcher to see if I can get thick sausages as I have not seen them lately in supermarkets. Love the idea , just like when we were younger mum used white potatoes and sauce on top.


    • Farmers markets sell good and thick sausages. If there is one near where you live they are well worth checking out. :)
