These sugar and dairy free wholemeal blueberry pancakes are great for the sweet tooth but with no sugar!
Ingredients (serves 4 | makes 12 Pancakes)
- 2 cups Wholemeal flour
- 1 cup Rice milk
- 1 Egg
- 5 Tbsp Natvia
- 1 cup Blueberries
- 1 cup Raspberries
- 3 Tbsp Honey
- 3 Tbsp Sunflower oil
- 1/2 cup Cottage cheese
- Mix the dry ingredients in the bowl (flour and natvia) in a bowl until combined. Add the wet ingredients (rice milk and egg) and mix until all dry is mixed through.
- Add blueberries and mix until all through the mixture. Heat the fry pan with some sunflower oil on a medium heat.
- Pour 1/2 a ladle full in the frypan cooking 1 minute on each side or until golden brown and repeating with the remaining mixture.
- Serve warm with raspberries, honey and cottage cheese for a nutritious breakfast.
