This Sugar Free Apple and Rhubarb Crumble is a healthy and delicious crumble recipe. Serve with low fat Greek yoghurt for bonus goodness.


Ingredients (serves 6)

  • 1 bunch Rhubarb, chopped
  • 4 large Apples, peeled cored and chopped
  • 3/4 cup Rolled oats
  • 1/2 cup Coconut
  • 2 Tblsp Pure maple syrup
  • 1 Tblsp Coconut oil

Method

  1. Peel and chop apples and rhubarb. Place in slow cooker. Cook on low til softened. Approx 2 hrs
  2. Melt coconut oil in frying pan. Add oats, coconut and maple syrup. Cook over medium heat til lightly browned, stirring constantly as it burns quick
  3. Place apple and rhubarb in bowls, sprinkle over oats mix. Sets hard after time

  • Lovely and sweet by itself from the apple/rhubarb mixture, we often add a bit of cinnamon to that.

  • I find stewed rhubarb quite bitter even with the addiction of apple …may have to add some healthy sweetener to it but the crumble sounds delightful.

  • I love this as a brekkie option and I know it would definitely be a fan with the rest of my family. It appears there’s enough sweetness without any additional sugar required. Looking forward to this one.
