I could actually live off this salad!! It’s filling without being heavy on the stomach, great for on the go or entertaining it keeps well so I live to make this when I have a busy few days ahead


Ingredients (makes 6 )

  • Quinoa 1 1/2 cup
  • Wholemeal pearl couscous 1 cup
  • Garlic infused olive oil As needed
  • Sweet potato 1 cubed and roasted
  • Celery 2 sml stalks
  • Pine nuts A small handful
  • Pomegranate Seeds of 1/3 of a medium pomegranate
  • Blueberries 1 punnet
  • Grapes 10-15 thinly sliced
  • Goats cheese 4-6 cubes
  • Chives Small bunch
  • Lemon 1 lemon
  • Mixed sprouts Handful

Method

  1. Preheat oven 190 Cut sweet potato into cubes and place into oven for 15 mins Allow to cool
  2. Cook quinoa and couscous as per packet instructions, Dress with Olive oil Allow to cool
  3. Slice celery, chives and grapes Place quinoa and couscous into a large dish
  4. Add celery, chives , grapes, blueberries, mixed sprouts, pomegranate, sweet potato, pine nuts Mix well add a little more garlic infused olive oil if needed
  5. Break up goats cheese over the top, Squeeze some fresh lemon juice on top and its ready to serve. ..add salt and pepper to taste

  • Looks amazing – so many healthy ingredients – not sure how it will go down in my household but I’ll give it a go!

  • Quinoa and couscous isn’t much liked in our house, but for the rest it sounds lovely.


    • Maybe I should make it once for my 15yr old, she most likely will appreciate this.

  • oh this looks so divine, and sounds like it would be super yummy – for some reason I see this on my table at christmas along side some leftover roast meat – thank you for sharing this recipe I cannot wait to give it a try


    • It did just that last Christmas, I was pregnant and almost living in this salad. I did a big batch as my Christmas contribution
