A quick and easy recipe for sweet potato lovers.


Ingredients (makes 4 Pieces)

  • 1 packet Filo pastry
  • 2 Sweet potatoes
  • 1/4 cup Corn

Method

  1. Preheat oven to 200 degrees. Steam veggies separately. Mash the sweet potato
  2. Using 2 pastry sheets for each roll, place some of the sweet potato along the shorter edge and then top with corn Roll it up also folding the sides in.
  3. Lightly glaze with butter. Cook for about 15 minutes or until golden brown on 200 degrees then cut each one to make slices.
