A great way to get lots of veggies into the kids and something different to put in the lunchbox instead of a sandwich.

Ingredients (makes 1 Large zucchini slice)

  • 5 Eggs
  • 1 cup SR flour, sifted
  • 375g Zucchini, grated and most moisture removed
  • 1 small Red onion, finely chopped
  • 200g Ham, chopped
  • 1 cup Tasty cheese, grated
  • 1/4 cup Vegetable oil

Method

  1. Preheat oven to 170C. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.
  2. Grease and line a 30 x 20cm lamington pan. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
  3. Can be served warm or cold

Notes... This can be made ahead of time and keeps in the fridge for up to 5 days. Can also be frozen and taken out as needed. This can be made vegetarian by leaving out the ham. You can also add in any other veggies you like - it's a very versatile recipe

  • This is one of my faves and a definite go-to to serve warm or cold. Whilst I always call mine zucchini slice, sometimes mine has no zucchini in it – but instead whatever is in the bottom draw of the fridge or pantry eg. sweet potato, pumpkin, baby spinach, capsicum. I should just rename it ‘vegie slice’. A hit in our home though, served with salad, or rice.

  • Nice one ! It’s a pity my kids don’t like these type of things cold, so I can’t put it in their lunchboxes.

  • I had a glut of cucumbers and found they worked as well as the zucchini, maybe even better as they stayed crunchy and the zucchini didn’t.
