A great way to get lots of veggies into the kids and something different to put in the lunchbox instead of a sandwich.


Ingredients (makes 1 Large zucchini slice)

  • 5 Eggs
  • 1 cup SR flour, sifted
  • 375g Zucchini, grated and most moisture removed
  • 1 small Red onion, finely chopped
  • 200g Ham, chopped
  • 1 cup Tasty cheese, grated
  • 1/4 cup Vegetable oil

Method

  1. Preheat oven to 170C. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.
  2. Grease and line a 30 x 20cm lamington pan. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
  3. Can be served warm or cold

Notes

This can be made ahead of time and keeps in the fridge for up to 5 days. Can also be frozen and taken out as needed. This can be made vegetarian by leaving out the ham. You can also add in any other veggies you like - it's a very versatile recipe

  • I love how versatile the zucchini slice is and made another one tonight. Before discovering this recipe, I’ve never cooked zucchini before! Now I love it and make this all the time with some variations.

  • Sounds nice and easy. I always have trouble finding a zucchini slice recipe you work. Squeezing out the zucchini as well gets all the juice it so the slice doesn’t get over wet.
