These super easy, super quick muffins are great – and not too bad for them either!

My little eater is turning into a bit of a fusspot. He started out with baby lead weaning eating broccoli, broad beans and scrambled eggs. But now he mostly eats bananas, papadums and cheese! So easy, healthy finger foods are my friends right now.

Ingredients (serves 1 | makes 12 mini muffins)

  • 220g Can of baked beans
  • 1 egg
  • 1/2 cup wholemeal self raising flour

Method

  1. Pre-heat oven at 180 degrees. Mix all three ingredients in a bowl (should be like cake batter).
  2. Spoon into a mini muffin tray.
  3. Bake at 180c for about 10 minutes or until risen and slightly golden.

  • Something different, never thought to use baked beans in a muffin. So creative, things us mums have to do to get kids to eat

  • Different reactions to the muffins, so have learnt to mash the beans so both pre-schools will eat them. Have added chopped ham to some and these go down better.

  • Have to give these a go…the kids will think they are eating cupcakes, whilst us parents know they are getting something healthy into them. Thanks for sharing!

  • What an interesting way to incorporate baked beans into a different meal. I usually just have them on toast with eggs
