More and more people are choosing to avoid gluten these days in a effort to control their health, it’s nice to have a party snack on hand that everyone can eat!


Ingredients (serves 8)

  • 1/2 cup Brown rice
  • 1 head Cos lettuce
  • 1/2 cup Quinoa
  • 1 tin Flavored tuna
  • 1tbs Balsamic dressing

Method

  1. Cook rice and quinoa until thoroughly cooked
  2. Stir through tinned tuna (I usually use a tomato based flavour)
  3. Wash and separate lettuce leaves into cups, dress with balsamic
  4. Scoop a small amount of rice and tuna onto each leaf and serve as a finger food

Notes... These are a great gluten free snack option for parties, it's nice to have something substantial that everyone can eat
