This a soy and meat free recipe that lasts well in lunch boxes on a hot day.
Tastes great warm from the oven or, cold.

Ingredients (makes 30 Bites)

  • 2 Sheets Puff Pastry
  • 6 - 8 Medium sized Mushrooms
  • 1/2 Onion, medium
  • 2 Garlic cloves
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper

Method

  1. Blitz the mushrooms, onion, salt, black pepper and garlic roughly in a food processor. Cut the puff pastry sheets into half.
  2. Preheat oven to 200 degrees C and spread baking paper on a large tray.
  3. Spread spoonfuls of the mushroom mix in the centre of the cut up puff pastry rectangles. Fold the two edges lengthwise till they overlap. Turn over. Slice into bite size pieces. Carefully transfer to prepared baking tray. Spray with non stick spray if desired.
  4. Bake at 200 degrees C for 15 - 18 minutes. Serve with tomato ketchup.

  • This is a very interesting recipe. Curious to see if my husband and toddler would eat these…maybe if I don’t tell them what is in it.

  • Ooh, I love mushrooms and have never tried a vegetarian sausage roll version. Happy to give this one a go.

  • Sounds delicious and easy to make. Great for vegetarians like me, but would substitute filo pastry for vegans since puff pastry contains butter.

  • Great to see a vegan recipe of MOM. You can also use tofu or tempeh as a replacement for the mushrooms, there are many recipes on the website forksoverknives.com. to increase your plant intake.

  • Yum, nice recipe !
Make sure the puff pastry doesn’t have cow’s butter when you truly want it to be vegan.
