A quick and easy Waldorf Salad with a twist, that goes down a treat with my family every time.


Ingredients (serves 4)

  • 3 Apples
  • 2 Stalks of celery
  • 2 Medium sized carrots
  • 1/2 Cup Sultanas
  • 1/2 Cup Walnuts
  • 1/4 Cup French salad dressing
  • 1/4 Cup Low fat mayonnaise

Method

  1. Cut apples cubes. Cut celery into cubes. Grate carrots.
  2. Mix apples, carrot, celery, walnuts and sultanas into a bowl.
  3. Combine French salad dressing and mayonnaise together.
  4. Stir mixture though all ingredients and mix until well combined.
  5. Transfer to serving bowl.

Notes

You can either use Granny Smith apples or your choice of red apples for this salad.

  • Instead of carrot I like this with red capsicum. I leave the dressing and mayo out and like to add garlic, red onion, curry powder, black pepper and cumin. When the salad sits for a while, liquids are released that work like a dressing.


    • Good thing with this type of salad is that is stays quite long good in the fridge.
