Make this yummy warm quinoa salad with roast carrot, kale & chickpea burger as a delicious meal for family or guests.
Serve as a delicious meal for the family or when entertaining guests. Serves 4.
1/2 – packet quinoa
2 – cups rocket or spinach
1 – punnet cherry tomatoes
1 – avocado
2 – spring onions or 1/2 spanish onion
1/2 – bunch continental parsley
2 – Roast Carrot, Kale & Chickpea Burger (Roast pumpkin burger would also be suitable)
Cook quinoa to packet directions, then drain.
Brush burger with oil and pan fry according to instructions on packet then break into bite size pieces.
Halve the cherry tomatoes, chop spring onions, avocado and rough chop parsley.
Add all the above ingredients to bowl and toss with dressing
1/2 cup olive oil
1/4 cup lime or lemon juice
Season with sea salt & cracked pepper
