This wholegrain rice with tofu and avocado recipe makes a healthy lunch or dinner for everyone!
Ingredients (serves 2)
- 1 Avocado
- 6 slices Tofu
- Half punnet chopped Cherry tomatoes
- 1/2 Lemon Juiced
- Add 2 cups of the rice with 6 cups of cold water to a pot
- Add some vege stock if preferred and stir until the wholegrain rice are soft. Cut up small pieces of tofu and add to your pot.
- Once cooked cut up avocado and cherry tomatoes. Salt and pepper if needed. Add lemon to add a yummy taste to this meal.
