This wholegrain rice with tofu and avocado recipe makes a healthy lunch or dinner for everyone!


Ingredients (serves 2)

  • 1 Avocado
  • 6 slices Tofu
  • Half punnet chopped Cherry tomatoes
  • 1/2 Lemon Juiced

Method

  1. Add 2 cups of the rice with 6 cups of cold water to a pot
  2. Add some vege stock if preferred and stir until the wholegrain rice are soft. Cut up small pieces of tofu and add to your pot.
  3. Once cooked cut up avocado and cherry tomatoes. Salt and pepper if needed. Add lemon to add a yummy taste to this meal.

Notes

To add extra protein to this meal you can add chicken pieces.

  • I’m not a fan of brown rice and there doesn’t seem to be too many ingredients to cover that up. Ild give it a go tho, for health reasons

  • A lovely recipe! I don’t enjoy much tofu, so I would change it with feta cheese. I love using avocados with pasta and rice!!


    • Tofu is so yummy when cooked the right way in good recipes – I am a tofu convert. :)
