A wholesome and super easy recipe to kick start your day.


Ingredients (serves 12)

  • 60g Butter, melted
  • 1/2 cup Sugar
  • 1 Banana, mashed
  • 1 Apple, finely chopped
  • 1/2 cup Blueberries
  • 1 Egg
  • 1 1/2 cups Self raising flour
  • Small pinch Salt
  • 1 teaspoon Cinnamon
  • 80ml Milk, yoghurt, sour cream, almond milk or coconut water
  • 1/4 cup Pecan nuts, optional

Method

  1. Put all the wet ingredients and sugar together, whisk.
  2. Stir in the dry ingredients, mixing as little as possible.
  3. Fold in fruit and nuts.
  4. Pour into muffin tin or loaf. Bake for around 20 mins (muffins) or 30-40 mins (loaf) at 180 deg C, or until golden on top and pulling away from edges of tin. Allow to cool in tin 5 mins before turning out.

  • My little variations bit didn’t get added to the end. Some other ideas: Variations:
    Mix together some soft butter, a handful of rolled oats, the same of coconut and a little brown sugar. Sprinkle a little on each muffin and kind of flatten onto them, before baking.

    I use Atta – Indian wholemeal plain flour that is really finely ground, plus 2 teaspoons baking powder per cup. You can get it in Asian shops or sometimes with the normal flour at the supermarket.

    Swap out the fruit as you like. Pear, cranberry, sultana etc.

    Banana is variable depending on how much you have – just use more or less flour and milk accordingly. You don’t want a super wet mix like cake, but not too dry either.

    I use brown, coconut or rapadura sugar because yum + better nutrients, less processed etc

  • A yummy sounding recipe for muffins – the pecan nuts will not be optional for me as I just love pecans in muffins, cakes and biscuits. Pecans taste so good in baked goods and I will be adding them to the recipe. Warmed muffins for breakfast are simply a good way to start any day.
