Ingredients (serves 4)

  • 4 cups Chicken stock
  • 1 bunch Choy sum
  • 200 gr Mushroom, sliced
  • 2 Boiled eggs
  • 2 cm Fresh ginger, finely grated
  • 1/4 cup Soy sauce
  • 150 gr Egg noodles
  • Chicken wontons :
  • 200 gr Chicken mince
  • 1/2 onion, chopped
  • 2 cm Fresh ginger, finely grated
  • 2 Garlic, crushed
  • 20 Wonton wrappers
  • 1 Egg, lightly beaten

Method

  1. Make wontons: Combine chicken mince, onion, ginger and garlic in a bowl. Place a rounded teaspoon of mixture in the centre of 1 wonton wrapper. Brush edges with egg. Fold corners together to form a pouch. Press to secure. Place on plate. Repeat to make 20 wontons.
  2. Place chicken stock and 4 cups cold water in a saucepan over high heat. Bring to boil. Add mushroom, choy sum, ginger, soy sauce, noodles and wontons. Simmer for 5 minutes or until wontons are cooked through. Serve with boiled egg and sprinkle with fried onion.
