Mums are always on the lookout for quick, easy recipes to fill little (and some big) bellies – here is a yummy pikelet recipe from KitchenAid.

Loved by all, the perfect lunch box filler, snack or morning tea.

 Makes: about 20 small pikelets

 Ingredients

1 cup (150g) self raising flour
¼ cup (50g) castor sugar
1 egg
150mls milk
2 tspn white vinegar
extra butter for cooking

Method

Place the flour, sugar, egg, milk and vinegar into a mixing bowl.

Attached the turbo beaters to the hand mixer, place beaters in mixing bowl, turn to speed 2 and mix until just combined. Increase speed to speed 7 (high) and mix 20-30 seconds or until batter is smooth.

If time allows, let batter stand for 15 minutes.

Melt a teaspoon of butter in a heavy based pan, swirling to coat the bottom. Use a ladle and place batter into pan and cook gently until bubbles appear, flip and cook until golden.

Repeat with the remaining mixture in batches.

Tips

Tip 1: Standing the batter relaxes the mixture which produces a softer pikelet.

Tip 2: Best eaten on the day of cooking.

  • I had to check this recipe out for pikelets!
    I am a big fan of pikelets and pancakes … so of course i was drawn to check this out =)
    I’ve never added vinegar to my mixes though ( and I am not a fan of the pre-mix/packets – they do not taste the same … they have this taste that I don’t like and can always tell they are packet – same goes for cake mixes).
    Am interested to know what the vinegar in the mixture does for it?
    My pikelet mixture is the same (minus vinegar) and they are ever so YUMMY!!!!
    What’s funny is hubby can never get it right, even if I leave instructions for him …
    So in my household, I am the pancake/pikelet queen ♥

  • My kids like making one big pike let! Or Mickey mouse when I do a big circle and then 2 smaller ear circles and they put raisins in for eyes
