This recipe uses no added sugar since the sultanas provide great sweetness and most peanut butters also have plenty of added sugar to sweeten. The trickiest part is adding the peanut butter and getting the mixture smooth!


Ingredients (makes 1 loaf/slice)

  • 1 cup grated zucinni
  • 1 cup wholemeal self-raising flour
  • 0.5 cup milk
  • 1 egg
  • 1 cup peanut butter
  • 3 tbl carob powder
  • 0.5 cup sultanas
  • 0.5 cup chopped peanuts

Method

  1. Mix grated zuchinni, flour, milk and egg
  2. Add in peanut butter, carob powder and sultanas. Stir until smooth and combined (add more milk if mixture too dry)
  3. Top with chopped nuts.
  4. Bake for 20-25 minutes in 180C oven (or until skewer comes out clean)

  • Nice ingredients. I would add the peanut butter before the flour and use unsweetened peanutbutter.
    I prefer to make chocolate zucchini brownies
